A Great Date Idea

The Ramadan season is so near and definitely a difference this year’s plans of eating in the household. However, tradition still lives on as we know that eating dates is a staple must-have during mealtimes. We thought we’d give it a little twist to change things up a bit at home with this little snack made with almonds, coconut, and dates makes a great appetiser during Iftar plus gives your body a healthy dose of fat, fibre and carbohydrates.

This yummy snack is a great one-handed snack for nursing mothers as well because you can easily just pick one up and gobble it down.

Ingredients
2 cups of almonds, or other nut/seed of your choice
1 cup of shredded unsweetened coconut
2 cups soft pitted Medjool dates
1/2 teaspoon of sea salt
1 teaspoon vanilla extract

Instructions
In a large food processor fitted with an “S” blade, process the almonds and coconut until a crumbly texture is formed.

Add in dates, vanilla sea salt and process again until a sticky, uniform batter is formed (be careful not to over process or the batter will become oily, so process until you have a crumbly but sticky consistency to your batter).

Scoop the dough with a tablespoon and roll between your hands to form balls. Arrange the energy balls on a baking tray lined with parchment paper, then place in the fridge or freezer to set for at least 30 minutes before serving.

Side Notes
You can store the balls in a sealed container in the fridge for up to a week, or in the freezer for an even longer shelf life.

For a more gourmet “feel” to the energy balls, you can roll them in cocoa powder before chilling.

You can also include rolled outs into your energy balls if you want more fibre.

Skip Those Fried Snacks
Fried and fatty foods contain a high percentage of the daily recommended fat and sodium intake, so eating them frequently may increase the impact of fatigue and exhaustion caused by fasting in Ramadan. Fatty foods have free radicals that can destroy the health of your blood vessels and increase the possibility of bad cholesterol forming in your body as well.
