BLUEBERRY LEMON BUTTERMILK SCONES

Serves: 10 Scones | Prep Time: 15 Minutes | Cooking Time: 16 Minutes

If you think the classic scones are delicious, try the fruit version. Traditional fruit scones would be made with a mixture of dried fruits but we used fresh blueberrries and it tasted amazing! 

You Will Need

  • All-purpose flour 420g 
  • Baking powder 1 tbsp
  • Baking soda 1 tspn 
  • Fine salt 1 tspn
  • Castor sugar ½ cup
  • Brown sugar 55g
  • Cold unsalted butter, cubed 230g 
  • Buttermilk 180ml 
  • Lemon Zest 1 no 
  • Fresh blueberries 225g 
  • Milk/cream for glazing ½ cup
  • Directions

    1. Preheat oven at 180°C and line a baking tray with parchment paper.

    2. In mixing bowl, combine all the dry ingredients except for blueberries.

    3. Working quickly, rub the cold butter into the dry ingredients. You will stll get cubes of butter.

    4. Turn the dough out onto floured work surface amke a well in the centre. 

    5. Pour in buttermilk and knead it gently until the dough comes together. You will get a shaggy mess at this point.

    6. Fold in the blueberries as well. 

    7. Cut the dough into 10 equal size wedges and place it on prepared baking tray. Brush the top with milk.

    8. Bake for 16 minutes. Once done, remove from oven and allow to cool.

    9. Serve warm with coated cream and preserves on the side.
