A simple and healthy dish that packs a punch of flavours. This lentil soup is a surprise package that will satisfy your hunger pangs.

 2 Carrots, Diced
 4 Garlic cloves
 1 Medium PS/PT Premium Yellow Onion, Chopped
 800 g Genting Garden Mini Heirloom Tomatoes, Diced
 1 Bay Leave
 1 cup Cirio Lentilles
 2 tsp Ground Cumin
 ¼ cup Colavita Extra Virgin Olive Oil
 1 tsp Drogheria & Alimentari Medi Salt Mill Grinder 90g
 Pinch of red pepper flakes
 Natural Rainbow Pepper Grinder, to taste
 1 tbsp Lemon juice

1. Soak lentils for 2 hours.
2. Warm olive oil in large pot over medium heat. Add chopped onion and carrot and stir until onion is soften and turned translucent.
3. Add garlic, bay leaf and cumin. Stir and cook until fragrant. Pour in lentils, water, diced tomato, salt and red pepper flakes. Season with black pepper.
4. Raise heat and simmer for about 1 hour.
5. Remove pot and stir in 1 tbsp of lemon juice. Serve while hot.
