This easy baked stuffed apples are the perfect way to celebrate your Halloween.

Yields1 Serving
 Royal Gala apple, 4 nos
 Golden raisins, 1/2 cup
 Walnnuts, whole, 1 cup
 Pecans, roughly chopped, 1 cup
 Macadamia nuts, roughly chopped, 1 cup
 Brown sugar, 1/2 cup
 Ground cinnamon, 1/2 teaspoon
 Ground ginger, 1/2 teaspoon
 Ground nutmeg, 1/2 teaspoon
 Salted butter, cut into small cubes, 4 tablespoons
 Lemon juice, 1/2 no

To prepare the apples, slice 1 inch off top of the apples. Using small knife or spoon, scoop out inner core and seeds from inside of each apples.

In a mixing bowl, combinegolden raisins with walnuts, pecans, macadamian nuts, brown sugar, ground cinnamon, ginger and nutmeg. Toss it well.

Spoon a few tablespoons of the nut mixture into the apple’s cavity until it recches the top. Repeat with the remaining apples and nuts mixture.

Pour lemon juice over the top of the apples and dot with 1 tablespoons of butter.

Bake the apples at 190˚C for 30 – 40 minutes until softened. Once done, remove from the oven and spoon juices remaining in the dish over apples and serve warm.
