BBQ Tiger Prawns

 12 Tiger prawns XXL
 3 Cloves of garlicPeeled
 2 Red chiliesDeseeded
 2 Stalks lemongrass
 5 tbsp Colavita Pure Olive Oil
 1 tsp Cape Herb Himalayan Pink Sea Salt
 1 tsp Pepper

1. Place the tiger prawns on a plate.
2. Pound the garlic, chilies and lemongrass together using a pestle and mortar, gradually adding the olive oil until you have a rough paste (or blend briefly in the blender).
3. Season with salt and pepper. Drizzle the prawns with spice paste and leave to marinate in the refrigerator for 2-3 hours.
4. Cook the marinated prawns on the hot barbecue for 4-6 minutes, turning, until they turn pink and feel slightly firm to the touch – try not to overcook.
5. Serve while hot.
