
BBQ Tiger Prawns

Christmas doesn't have to always be about the meats. Try out our BBQ Tiger Prawn recipe to mix things up on the dining table!
1. Place the tiger prawns on a plate.
2. Pound the garlic, chilies and lemongrass together using a pestle and mortar, gradually adding the olive oil until you have a rough paste (or blend briefly in the blender).
3. Season with salt and pepper. Drizzle the prawns with spice paste and leave to marinate in the refrigerator for 2-3 hours.
4. Cook the marinated prawns on the hot barbecue for 4-6 minutes, turning, until they turn pink and feel slightly firm to the touch – try not to overcook.
5. Serve while hot.
